What is Filipino Food?

Imagine a native Malay cook with a Chinese roommate being taught by a Spanish Chef with a love affair for everything American and you will begin to understand what Filipino food is all about.

Filipino food offers a bold combination of sweet, sour, and salty flavours. There is often an aspect of counterpoint in each dish where contrasting flavours such as sweet and salty are paired together to create delicious combinations. Filipino cuisine has had many cultural influences throughout its development. Chinese traders, Spanish settlers, and American soldiers have all contributed to the cuisine.

Filipino food is simple honest food. It’s a natural fusion of many different cultures all served over rice. Come discover the diverse flavours and explore different food combinations.

Our mission is to expose Filipino cuisine to the mainstream. 

Lamesa is a Filipino restaurant located in downtown Toronto. Our food is not traditional Filipino but rather Filipino inspired. Our style is shaped by our environment and where and how we grew up. We take a regional approach to the cuisine. Each of the 7000+ islands in the Philippines has developed their own style based on their customs, surroundings and what is locally available. For us, Toronto is just another island.

 

We pride ourselves in providing warm and friendly service. We have a passion for Filipino food and we want to share it with you. Come in on your own, with a date, or with a bunch of friends and discover the diverse flavours of Filipino cuisine.

Rudy Boquila, Head Chef

Chef Rudy is a passionate guy. He truly loves music and he definitely loves food. As a producer/musician/DJ Rudy has worked with some of TO’s best. He’s produced some classic Toronto tracks and held it down on the radio for years. If you saw his record collection you would understand. This man loves music.

As a chef he started at the Bamboo and went on to work at Oyster Boy and the Gladstone Hotel. He also spent some time cooking on tour with Live Nation for groups like U2, Bon Jovi, AC DC, Aerosmith, and the list goes on. He is now applying his creativity to Filipino food. He leads a team of young and talented chefs that are doing their best to expose Filipino cuisine to the mainstream.

Rudy has always maintained that the kitchen here at Lamesa would always be open to other chefs who are passionate about Filipino food. It’s all about building a community.

This is a labour of love and it shows.
