daniel cancino, Head Chef

Born in Hong Kong, raised in the Philippines, Cancino fell in love with the aromas and flavours of home cooked Filipino food since he was a boy. He got his first industry job as a dishwasher/prep cook at 15 before deciding to go to George Brown to attend their culinary program. Before taking on the role as Head Chef at Lamesa he most recently worked at Hudson Kitchen, Kanto, The Thompson Hotel, and Union. His interpretation of Filipino food involves referencing flavours and aromas of food growing up in the Philippines while using ingredients and techniques learned while cooking professionally in Toronto. He ties that all to local, seasonal produce creating unique interpretations of classic Filipino dishes.
